Whoooo-weeeee! It’s been a whirlwind of a week and I’m glad to see the weekend arrive at last. I tried something fun for dinner the other night and it was so easy and delicious, I simply have to share.
Pizza. We love it. We eat our weight in it. We can’t get enough of it. I had to make two out of utter insatiable cravings and decided to switch up the old faithful pepperoni and cheese. Much to my delight, the switch was sublime and I didn’t have to spend 4 days in the kitchen preparing it.
The secret is in the sauce. I make my sauce from scratch…and did for one of the pizzas. But the other one…ooooohhhh the OTHER one. Brace yourselves: Pesto. Sundried Tomato Pesto. That’s it? That’s IT!
I grabbed this little mischevious jar of sundried tomato pesto sitting on my pantry shelf and spread it generously on my (don’t judge) Pillsbury Pre-made Pizza Crust. The rest of the toppings remained the same…pepperoni, black olives, sauteed onion and provolone and mozzarella cheeses. If all you can find is a jar of sundried tomatoes, puree them in your blender and add 1/4 cup of parmesan cheese.
What came out of the oven was a gourmet feast that had us scrambling for piece after delicious piece. I’m thrilled that I went out on a limb…otherwise that little jar of pesto would still be taunting me – as you can see, I still have 3 jars to go. Don’t be afraid to switch up your tried and true recipes a bit…you never know what culinary amazingness is waiting to be eaten as a result!
